Troglodytes are the proverbial average unit. With average stats overall and good Damage, they can help other melee attackers in battle if need be, but they are best used for defending Beholders early in a map. Get the Dungeon horde building for some extra Troglodytes to add to their growing numbers every week.
Infernal Troglodytes are a more offensive style Troglodyte, with decent improvements to Health, Attack, and Speed. Stick them on the front line to get the most out of them in tougher battles, but they should still protect the Beholders most of the time.

Harpies have decent Health and low Damage, but they can hit enemies from medium distance and return to safety with a great special ability. Be careful; a strong target's retaliation may trim your numbers down a bit, because Harpies sacrifice endurance for an offense advantage over their foes.
Harpy Hags are essentially ranged attackers. They can strike faraway enemies for good Damage and return unscathed. This does have its downsides, because Harpy Hags cannot land next to a ranged enemy and attack on the same turn(This was changed in the WoG add-on). They are an extremely important part of the Dungeon army.

The Beholder has an above-average stat assortment. With this, Beholders are able to perform well in any situation, even melee confrontations. They do not deal half damage with melee attacks like other ranged units, so do not be afraid to put that to use if enemies dare approach.
Evil Eyes make use of a complete stat improvement in all areas except Damage. This allows them to further their purposes during combat. Fire at weak enemies until they get too close, then hit them with a melee strike before they can respond to the surprise.

Tips

The Medusa's stats are all slightly below-average, but her Stone Gaze ability lets her turn an adjacent enemy to stone with melee attacks sometimes. So, if an enemy gets too near, do not panic; its the enemy's funeral.
All of the Medusa's stats improve with this upgrade, making all the Medusa Queen's stats above-average. The nice Health bonus helps them stay alive in close encounters where that Stone Gaze fails, while a few extra shots gives them some more ranged potential until they have to switch to melee strikes.

Minotaurs have spectacular stats, especially offensively. With high Attack and very high Damage, Minotaurs deserve some major recognition. Send them out to cleave weaker melee units into submission, or stand against some stronger units without crumpling under the pressure.
As if Minotaurs could not get any better, Minotaur Kings put some extra points in Defense with some nice armor, and get a jolt of Speed for maximum game-time. The Cost is not too bad either. Minotaur Kings are very important in difficult campaigns because they will often survive the close battles.

Manticores have similar usefulness to Psychic Elementals. Average stats and low Cost make the Manticore semi-economic, and no matter what, it is always good to have as many high level flyers as possible.
Scorpicores get a small boost to some of their older stats, but a large boost of Speed. Being fast and moving far give the Scorpicore a good initiative factor. They are excellent for stopping melee units heading towards ranged allies, and destroying enemy ranged units at the start of a conflict.

The impressive Red Dragon has good Health and very good Damage, but not much Attack or Defense. Use their Breath Attack to hit lines of enemies two at a time, but be careful not to hit your own units in the process.
Black Dragons are mighty indeed - massive increases to Health, Attack, Defense, and Speed allows them to terrorize the enemy. They are a bit pricey, but they come with complete Magic Immunity, so no spell can harm them. Unleash your Black Dragons on any enemy in sight, or take only Black Dragons in your army and bombard the enemy with the Armageddon spell repeatedly, so your own dragons remain unscathed, while the enemy is burned to a crisp.

The Darkness Dragon is the master of disaster. Average stats and very high Health give it incredible longevity in every battle, but most of the time, it won't even be in the battle, thanks to its 'Strike and Return' ability! Essentially a super-harpy, this fighting machine shrouds its owner hero in fog-of-war to prevent detection from enemy heroes. How exactly do you use the Darkness Dragon? Use it to nail enemy ranged attackers once in a while - score a nice hit and retreat to safety. In a nutshell, you can use the Darkness Dragon pretty much any way you want. (Note that the Darkness Dragon is only available in the Wake of Gods add-on to Heroes III)
