When will the game go gold?

Most likely around March is my guess as well. But it doesn't bother me if they ship it later than that, just as long we fans get a even more polished and bugfree game

I just don't hope they wait too long though, so that people start to lose interest.

I think the question is not relevant enough.

I believe the game could go gold whenever ubisoft wants, but would the game be "done"? What I mean is that if the game goes gold on february and is patched 3 times in march, april and may, one should consider the game is really available only when the last big bug correcting patch is out.

Therefore in my opinion, the question should be: when will the game be done ? And to that question I'd randomly answer april.

No such thing! Me, i'm hoping for a relatively balanced game that has very few bugs.
