Alcohol Infused Goodness
I only drink champagne at New year's Eve and birthdays, but never more than 1 or maybe 2 glasses. I think I read somewhere that the champagne is running out of stock (the REAL champagne, from Champagne) since all celebrity is taking baths in the stuff, and that we have so many new millionarie world wide that drink champagne.

There's an old saying about mulled wine: if it's boiled, it's spoiled. And boiling off the ethanol is the least of the problems - it just becomes bitter and nasty when you boil it.
Use a stainless steal pot, also. Wine is acidic and if you heat it in another type of metal you get metallic tasting mulled wine.

ok, boiled is an overstatement... it's relatively hot... most certainly not lukewarm like vulnevia's.
well that's cheatingNo, no need for that, we buy our mulled wined prepeared with spices (cinnamon, cloves and cardamom) and all that, we just add some raisins and almonds, and it's already sweetened as well.

I like a good mulled wine on a cold winter's eve. Hot hard cider with cinnamon liqueur is nice also.
I'm going to have to ask my friend Kevin what he does to make that 'Cinnamon stuff'. I know all he does is soak cinnamon sticks in some sort of alcohol for a month or so and it gets rather thick and sweet. It's SO strong that you can't drink it straight, but if you put just a shot of the stuff in a cup of hot cider it's WONDERFUL! Just like apple pie, with a kick!
