Sorry for taking so long - I forgot to check the game
Anyawy:
There are creatures that are melee fighters normally, but when upgraded become shooters (for example, titans). The question is:
Considering all official Heroes games (so no Wog / Equilibrus / H5 mod / &c.), how many creatures at one time was able to shoot, and at another time could not? The two forms can be in the same or different games, in either order.

Air Elemental - non-shooter; Storm Elemental - shooter (III)
Gremlin - non-shooter; Master Gremlin - shooter (III)
Giant - non-shooter; Titan - shooter (II; III; V)
Skeleton - non-shooter; Skeleton Archer - shooter (V)
Water Elemental - non-shooter; Ice Elemental - shooter (III)
Different games:
Centaur - shooter: I II IV; non-shooter: III
Fire Elemental - shooter IV V: ; non-shooter I II III
Gremlin - shooter: V; non-shooter: III
Medusa - shooter: III; IV; non-shooter: II
Troll - shooter: I II; non-shooter: III, IV
Considering skeletons as a unit in general, there you have non-shooters in II, III, IV and V (not upgraded) and shooters in V (upgraded). The same applies to dwarves and spear wielders/skirmishers or rune mages/rune patriarchs). Rogues, bandits and assassins are of a different kind, I think.

@ Mystic Phoenix: You got many of them, but I have more on my list. One of those, however, is debatable about being the "same creature" since there was a name change, so I won't wait for that one to be given before declaring the question done. (and no, it isn't the distinction between giant / colossus, as they definitely are the same creature)
The others are difinitely missing from your list.
Also, you are correct about the ones you were apparantly in doubt for- Dwarves count, but scouts/assassins are different from rogues (and yes, I debated this for a little while when making my list, but since you mention it already I don't have to worry anymore )

Two more came to my mind yet, bur Gaidal Cain mentions 13. Dwarves, Magi (non-shooter in H4) and Cyclops (non-shooter in h2) + Mystic Phoenixes. Hmm- he has gremlins twice (hadn't noticed that before), so that's only 12.
Though one could perhaps count some of the elves in H5 as nonshooters as well. And the Orcish boar riders in H3.

There is one more left - and that's a tricky one... and maybe the debatable unit, Qurqirish Dragon speaks about.
The catapult from the H4 expansion is a shooter which it isn't in any of the other installments - at least not as a shooter defined in terms of game mechanism.

I won't say what the correct number is, only if there are still some left.

Yes, elves qualify for the same reason that dwarves do. MP already listed dwarves.
I'm not at home (where I have my list), but I think that the only one left is my debatable one, so I'll list that one (as I said I would):
The Evil Sorceress (H4, non-shooted) vs. Shadow matron/matriarch (H5, shooter). They are similar creatures (female spellcaster, evil alignment), but may not be classified as the same unit.
Another one would be if you considered the Gnasher and Behemoth the same in H4, but I decided they are different (even though they have similar models)
I believe this means MP gave the most answers from the list, and GC the last one. I'm not certain by the rules of this game who gets the next question.

Normally it would be Gunnar, Kyre and Dessa. But I'm not sure what about specific situations. Spells, pathfinding all is related...

With a sufficient number movement-boosting sites, monster stacks / battle sites, and an admiral's hat, any hero can go arbitrarily far on land, sea, or both. I want to know names of those heroes who have the most movement points on land (that means not in a boat). Assumption is, that all heroes have the same conditions... you are not supposed to answer, Crag Hack with boots and gloves can walk more tiles than Gunnar without.
Some heroes can walk more tiles than others (normally you would name Dessa, Kyrre, and Gunnar, but they are not the ones I'm looking for), but they can do it only in a special situation, under special circumstances.
So, give me the names and the reasons for your answer. Hope, that it gets clearer now.
